Nicole’s interest in nutrition began at a young age. Growing up she was a snowboard racer on the U.S. Junior National Team, traveling the world to compete and learning the importance of healthy nutrition to fuel her body. Inspired by her passion for nutrition and desire to help others, Nicole completed her B.S. in Nutrition from Cornell University and a dietetic internship at New York Presbyterian before eventually completing her Masters in Sport Nutrition from the University of Colorado. She is also a Certified Specialist in Sports Dietetics (CSSD) and a Certified Diabetes Educator (CDE).

Based in Denver, Nicole owns and runs Racer’s Edge Nutrition, a sport nutrition practice where she enjoys working with complex sport nutrition cases (athletes with medical conditions) as well as recreational and elite athletes looking to improve performance or change body composition. Nicole has worked extensively with athletes who have type 1 diabetes, professional snowboarders, the U.S. Speed Skating Team, cyclists, runners, triathletes, weight-lifters, and Ironman athletes, among other sports. Nicole and her team also counsel athletes with celiac disease, other gastrointestinal disorders and those who follow vegan diets and other dietary patterns.

As Jele’s Nutrition Advisor, Nicole is our go-to expert for advice on healthy hydration, nutrition and highlighting the importance of both for growing bodies.

  • “It’s tough for parents to find a low-sugar alternative to juice and soda that their kids will want to drink, and even tougher to find one that’s fortified with as much calcium as 8 oz of milk. Jele tablets taste great to encourage kids to hydrate, have calcium and vitamin D to help strengthen bones, and only 1 gram of sugar. Jele tablets are a great choice to help kids put down the sugary drinks AND improve bone health.”
