Nicole Rubenstein, MS, RDN, CSSD, CDE
Nicole’s interest in nutrition began at a young age. Growing up she was a snowboard racer on the U.S. Junior National Team, traveling the world to compete and learning the importance of healthy nutrition to fuel her body. Inspired by her passion for nutrition and desire to help others, Nicole completed her B.S. in Nutrition from Cornell University and a dietetic internship at New York Presbyterian before eventually completing her Masters in Sport Nutrition from the University of Colorado. She is also a Certified Specialist in Sports Dietetics (CSSD) and a Certified Diabetes Educator (CDE).
Based in Denver, Nicole owns and runs Racer’s Edge Nutrition, a sport nutrition practice where she enjoys working with complex sport nutrition cases (athletes with medical conditions) as well as recreational and elite athletes looking to improve performance or change body composition. Nicole has worked extensively with athletes who have type 1 diabetes, professional snowboarders, the U.S. Speed Skating Team, cyclists, runners, triathletes, weight-lifters, and Ironman athletes, among other sports. Nicole and her team also counsel athletes with celiac disease, other gastrointestinal disorders and those who follow vegan diets and other dietary patterns.
